The main factors are the environment and the right IP rating, IP65 or higher for dust and damp, and higher still for pressure-washed areas such as dairies. You should also consider corrosion-resistant, impact-rated housings, the light level needed for the task, and for livestock, dimmable and controllable fittings to suit welfare light regimes.
